To be honest, we were a little skeptical about these protein cup-cakes at first and had no idea how they'd turn out or what they'd taste like. Talk about pleasantly surprised!
The Ingredients
1 large scoop of protein powder (your choice of flavour - we used chocolate)
1 whole egg
1 tablespoon of peanut butter
1 tablespoon of water
Prep time: A few minutes
It's a simple as this: using a spoon, mix all the ingredients really well, in a large cup. Microwave for one minute.
That is all!
It's like a fluffy mousse in a cup and tends to make a little 'sauce' in the bottom.
Trust us; you'll make more than one! We had to, er, test them twice, and we now add cinammon. So good!
Note: Since we first tried these protein cup-cakes, we've experimented a little. For a little difference, we used half a tablespoon of peanut butter and half a tablespoon of honey. Be careful when adding more protein powder, because they can go a bit chewy.
How they taste also depends on the protein powder you're using. Ours is a high quality protein, but it's also relatively sweet to taste. I've experimented using supermarket bought protein powder that's about 1/3 carbs; the resulting flavour wasn't as good.
